Courgette & Hazelnut Cake: 100gm (4oz)
chopped hazelnuts, 225gm ( 8oz ) castor sugar, |

3 medium eggs, 210ml ( 7fl oz ) sunflower oil, 30ml ( 1 fl oz )
walnut oil, 225gm ( 8oz ) courgettes topped and tailed, 280gm
( 10oz ) S R flour, ¼ teasp. Salt, 1 teasp. Ground cinnamon,
23cm (9in )cake tin. |

Method: Put sugar, eggs, and oils into a
bowl, and whisk until thick- 3-4 mins. Grate courgettes and
squeeze in a tea towel to remove water. Add courgettes to oil
mixture. Sift flour, salt, and cinnamon into bowl. Fold gently
and add nuts. Put into oiled tin and bake at 180ºC or gas Mark
4 for 50-55 mins. |

Victoria Sandwich: 175g ( 6oz ) castor
sugar. 175gm ( 6oz ) margarine, 175gm ( 6oz ) S R flour, 3
eggs, pinch of salt. Bake in two 18cm ( 7in ) round tins at
180º C or gas Mark 4 for approx 30 mins, sandwich together with
jam only, dust with castor sugar. |

( 6oz ) margarine, 125gm ( 5oz ) castor sugar, 100gm ( 4oz )

50gm ( 2oz ) glace cherries, 3 eggs, pinch of salt, milk to
mix. Bake in 18cm ( 7in ) round tin at 170º C or gas Mark 3 for
approx. 1 hr. |
